Steps to making:
Step 1: Prepare the ingredients
Soak the dried sea moss in water for 1-2 hours until it fully expands, then rinse it to reduce the saltiness. Making fresh sea moss candies is similar to making the dehydrated sea moss.
Peel and clean the ginger, then cut it into thin slices or finely chop it, depending on your preference.
Step 2: Cook the sea moss
Add 1-2 liters of water to a pot and bring it to a boil. When the water is boiling, add the sea moss, sugar (adjust the amount to your taste), vanilla, and ginger. Cook until the sea moss is completely dissolved. Note: Boil the seaweed for only about an hour on low heat to avoid any sticking to the bottom of the pot.
Tip: If you want the candy to have vibrant colors, you can use natural-colored water made from carrots, beets, etc., instead of plain water and then follow the same process in step 2.
Step 3: Pour into molds and dry in the sun
Pour the sea moss mixture from step 2 into the prepared molds or trays. Let it cool, and then dry it in the sun for about 6-7 sunny days. Alternatively, you can use a food dehydrator if you want to speed up the process.
Step 4: Finished Product
After sufficient sun-drying, break the dried sea moss candy into bite-sized pieces using a small knife. Store the candy in a glass jar to preserve its freshness. You have delicious and colorful dried sea moss candy ready to be enjoyed.
Some notes when making dried sea moss candy:
- If you don’t like the spicy taste of ginger or the scent of vanilla, you can omit them. This won’t affect the quality of the candy.
- Rinse the sea moss thoroughly several times to remove excess salt.
